I love mac n cheese. Like I’m obsessed with it. A good mac n cheese is just so comforting, filling, hearty, and just simply amazing. This Acorn Squash mac n cheese is on another level, because it’s also healthy.
You want to start by roasting your squash. Cut it in half, drizzle with olive oil, and season with salt and pepper. Roast it in the oven. Then you’re going to scoop out the inside and mash.
I also chose to bake some chicken breasts to add to my mac n cheese. I just kept them simple, seasoned wirh salt and pepper. Once cooked, I cut up the chicken into large pieces.
Then I boiled up my pasta, and strained out the water.
In another pot, I turned the acorn squash into a sauce.
The sauce is made of the mashed squash, chicken broth, butter, milk and some spices.
Because I made my sauce in a larger pot, I added my pasta on top of the sauce, mixed it, and added my chicken breast.
And just like that, a rich, delicious, hearty and healthy Acorn Squash Mac n Cheese with chicken.
