Garden Chicken Pasta

This is just a simple pasta that I threw together tonight. What I like most about it is that it’s adjustable to your tastes so you can add and take away things that you do or don’t like. Really, this is just a guideline or starting point.

My first step was to prepare my chicken breasts to bake. They were frozen because I definitely did not have anything planned for dinner. I basically dropped them from the packaging straight onto my baking sheet. I preheated my oven to 400°. I seasoned my chicken with salt, pepper, smoked paprika and Italian seasoning. You can use these or your favourite chicken spices. I seasoned both sides. I then placed them in my preheated oven and let them bake for an hour. When they were done, they were cooked to an internal temperature of 165°. I let them rest for 5 minutes to keep the juices and then sliced and cubed them for my pasta.

If you’re not into chicken, you can skip this step or cook yourself some shrimp or bacon.

My next step was to boil a pot of water and cook my pasta. I chose to use some shell shaped pasta, and as I had half a box of that, I just cooked what was left. You can cook as much or as little as you want, depending if you have multiple people eating or if you like having leftovers. And of course, you can cook your preferred pasta as well.

Finally, I prepped my sauce. I didn’t make a sauce from scratch or anything. I had a jar of Classico Alfredo and Roasted Garlic sauce so I poured the whole thing into a large pot. I like my pasta saucy, but again, you can make it how you like.

I then added my veggies to the pot as I washed and prepped them. I used spinach, red bell pepper, yellow bell pepper, garlic, carrots and celery. Again, this is another part where you can add or take away according to your preferences. I have tried broccoli, tomatoes and cucumbers before. You could probably also try it with zucchini, peas, beans, mushrooms or cauliflower.

Once I had all my veggies in my pot, I turned my burner to just past medium heat and warmed up the vegetables and the sauce to a simmer. I then added the pasta and gave it a good stir in the sauce to make sure it was well coated and then added my chicken breast, mixed it well to coat it, and heated it for a few more minutes. Then I was good to go, a simple and delicious pasta dinner!
